Petit Verdot lends itself to making a monster red wine. The varietal has incredible color and tannin, and can easily be over extracted. Proper ripeness at the time of harvest and handling in the winery are critical to the sucess of a varietally bottled Petit Verdot. We fermented this wine in one ton Macro Bins and punched it down by hand, much less than we would most other wines. Color and tannin extraction are almost immediate, and thus this wine was pressed off with some residual sugar and allowed to finish fermentation in the barrel.
